
Like most people who enjoy cooking, I also enjoy gadgets, and specialty knives. Many of us have a knife block with several knives, and even a pair of scissors, all of which are designed for the various kitchen tasks that we perform on a daily basis: A chef's knife for chopping, scissors for snipping, a bread knife for cutting bread, a couple of el cheapo steak knives for all around cutting of things that shouldn't be cut with a valued knife, and of course, at least one 6 inch utility knife.
This 6 inch kitchen utility knife is perfect for so many tasks. It was designed with input, if not specifications from Alton Brown, the renowned TV chef and commentator for Iron Chef America. This knife is also special because of it's angled blade. The blade is angled so that you don't have banged up knuckles when slicing or chopping. The angle allows your hands to be clear of the cutting surface while maintaining a straight blade that is parallel to the cutting surface while doing the actual cutting.
I use this knife for most every cutting task, but especially for cutting vegetables like tomatoes, onions, bell peppers, mushrooms, and celery. The blade is a bit short for doing things like slicing flank steak, tri-tip, or chopping sweet potatoes or squash like acorn squash or butternut squash.
My knife block has a sharpening steel, so I keep mine sharp by honing it almost every time I use it, but especially after cutting things with tough or fibrous skins like pineapple, potatoes, or root vegetables like turnips or parsnips.
For all around usage in the kitchen, this knife is one of the best I've ever seen. With the addition of Alton Brown's input, I can wholeheartedly recommend this knife.
